A culinary highlight of our travels to Greece that has kept us coming back. Close your eyes and let the visceral smell of the grilled herbs take you on a trip to the slopes of the Greek islands.
- Using the side of a heavy knife or a small pan, flatten the chops well.
- Lightly oil the lamb chops and sprinkle them with the herbs.
- On a grill or in a very hot pan, cook the chops for 2 minutes on each side.
- Serve accompanied by fleur de sel.
