A rub is a blend of spices and salt that is spread on a piece of meat before grilling. Salt is the real key to this blend: it allows the spices to stick to the meat without falling off during grilling. Simply rub the blend on the meat a few minutes, hours, even days before cooking to allow the flavors to penetrate. This method, also called “dry brining,” long known to BBQ chefs and pit masters, is now available to you thanks to this dry rub.
