Gulai is a typical Sumatran dish that is equally common in Malaysia. It is, in reality, a curry, which works nicely with poultry, meat, vegetables, and fish, as well as any thing with coconut milk. This spice blend is a reproduction of one we composed while were spending time with the Minangkabau in Sumatra. Deeply fragrant, with aromatic spices like kentjur, lemongrass, and kaffir lime leaf, this blend has a great affinity for coconut oil, coconut milk, and hot chilies. It can be used in slow cooked dishes or even grilled fish and seafood.
