Philippe de Vienne was a well-known caterer for many years before hanging up his chef’s hat to become a spice hunter. Along with his wife and business partner, Ethné, he’s traveled the globe searching for the world’s greatest spice terroirs. It’s on these many trips that he’s able to learn local cuisines, techniques, and recipes. He learns as much visiting markets as he does in the kitchens of Zapotec mamas in Mexico or with his aunties in India or Sri Lanka. Philippe has a weakness for family cooking with spices, the flavors of Indonesia and the many chile peppers particular to Oaxaca.
