Yucatan annatto is as remarkable for its mild and penetrating flavor and for its vivid color. It is used in cochonita pibil, a traditional Yucatan dish of braised pork. As with all annatto seeds, they can infuse oil with deep color and aroma. Well suited to accompany rice dishes.
