Red Awaze is an Ethiopian sauce made with spices and garlic and oftentimes includes local mead or red wine. The spices essential to its composition consist of relatively mild chilies, aromatic spices and herbs such as rosemary and beso bela. The ingredients in Awaze may vary from cook to cook, as does the consistency of the sauce itself. Awaze often accompanies cooked or raw red meat and fish. It also adds a wonderful fragrance to slowly simmered dishes.
Our Awaze blend incorporates some spices that are rarely found outside of Ethiopia – such as Korarima, Beso Bela (a variety of Holy Basil) and Berbere Chilies, which we roast ourselves in our production facility. It is a highly aromatic, well balanced blend which easily enhances simple dish of steamed carrots, chickpea stews or lentils. Awaze spices are equally delicious in vegetable soups and red wine or Port braised meat dishes.
