This intensely dense peppercorn is profoundly black and is, without a doubt the hottest of our collection! Its penetrating heat is persistent and disseminates quickly, while insistently settling on the palate. Its synchronized notes – woody and vegetal, combine to make this pepper an interesting addition to any dish that could benefit from its wonderfully tasty, piquant profile.
Baffia is a village nestled in a hollow of the gulf of Guinea , on the Cote d’Ivoire close to the Ghanaian border. The little village was established by scout warriors loyal to the king of Sanwi, the Agniwas being the ethnic group that inhabited the district of Aboisso. These warriors were masters in the art of concealment and camouflage and were able to ambush any intruders to their territory – their reputation and location, therefore, warranted the name Baffia, which means “ those who know how to hide”.
