A curry from the south of India, hot and delicious, with notes of ginger, fennel, and cardamom.
The town of Chettinad is found in Tamil Nadu, a province in southern India. Its cuisine is renowned for its complex spice masalas and high tolerance for heat. Chettinad Chicken Curry, made with coconut milk and tomato, is one of the region’s iconic dishes.
Our Chettinad Curry blend is inspired by a recipe for this celebrated chicken dish. It’s composed of several highly aromatic spices, toasted spices, and a healthy dose of chilies. The heat from this blend is a testament to the complexity of Tamil cooking- it’s derived not just from the chilies, but also the ginger and pepper. This makes it an intense, warming curry that still manages to not burn your tongue.
Chettinad Curry is designed for dishes with chicken and coconut milk. However, it’s just as great on vegetables like cauliflower, green beans, or potatoes.
Thiripurasundari generously welcomed us into her home in Theni, Tamil Nadu and showed us how to prepare Chettinad Chicken Curry. It is with great humility that we choose to pay homage to her expertise, by creating this curry blend, which was greatly inspired by her masala.
