Possibly the rarest chile in Mexico. A beautiful orange-yellow chile used for making mole amarillo. Medium heat and full of flavor, chilhuacle Amarillo, or ‘yellow chilhuacle,’ should be reserved for special occasions.
All chilhuacles are slowly falling out of favor and are slowly disappearing due to their high production costs. Spice Trekkers are making a concerted effort to import and popularize these chiles to contribute to the survival of these truly ancient chiles.
