An extremely rare chile with a unique aroma.
Chilhuacle peppers are relatively unknown outside of Oaxaca, Mexico. The red Chilhuacle is used primarily in red moles. This chile is smoked in villages dotting the Sierra Mixe, which is known in the region for its exceptional smoked chiles.
The many varieties of Chilhuacle are becoming less and less common, due to the extremely high cost of producing them by hand. We work in concert with our producers to help make this chile, and others, more well-known. If this and other heirloom chiles become more popular, we can be assured of their continued production.
