True cinnamon, which in the West, is often confused with cassia, is the delicate lining found between the trunk and the bark of the cinnamon tree. It has a fragrance that is more complex, yet less aggressive than cassia. Very delicate, it can easily be rolled between the fingers and crushed into shavings. Like pepper, a pinch of true cinnamon can perk up many a dish.
