The island of Grenada produces one of the world’s best cocoas. The beans are harvested by hand in the village of Paradise, where it grows among nutmeg and West-Indian bay leaf trees.
Raw cocoa beans have a powerful, woodsy fragrance, with expected bitter notes and a touch of acidity. Their taste is more delicate and less bitter than roasted cocoa beans.
