These sour, slightly bitter dried limes bear a strong, direct lemon/lime aroma bordering on brazen.
They’re an incredible addition to fish and seafood soups- just throw them in whole. In the Middle East, they can be crushed and added to all manner of simmered dishes, notably lamb with herbs. Cracked Dried Limes are also a great addition to tajine.
To add the peel as a powder, remove the flesh inside before grinding. This makes a great addition to sautéed vegetables or a marinade for chicken.
