This Layover blend reflects the essence of the Greek islands where wild herbs and lemons grow abundantly. There is no one definition of a Greek spice blend, as each island has its own unique and flavourful cuisine. We have however incorporated the usual suspects such as oregano, garlic and lemon, with a hint of heat from black pepper and Aleppo chilies. Full disclosure; this Layover has met with the approval our cherished colleague Georgia, who is from the island of Chios!
The blend enhances lamb, as well as poultry and fish. It works exceptionally well with olive oil-based dishes and feta. This layover is great to make pork souvlakis. This is a wonderful combination of spices that is perfect for white wine, braised meat dishes.

Travelling has never been easier! With the addition of Layover blends to our spice line, we wanted to recreate the flavour profiles that mark our memories after a short stop-over in any country.
