A smaller variety with a reddish skin tone and intense flavour, which is hotter and more aromatic than white ginger. Can be used in desserts, infusions and dishes that merit a lively, peppery, ginger taste.
This ginger comes from the mountainous region of Meghalaya, a northern Indian state very close to Bangladesh. Locals call it “Sying Makhir” or “Ing Makhir”. These Khasi words “Sying” – means ginger, and “Makhir” – which signifies small. In the Janita Hills region, the Pnar people refer to it as “Ing Traw”, when translated means “little ginger”. Red ginger is used as frequently for cooking as it is for medicinal purposes.
