A contemporary Indian spice blend that’s great on a variety of fish.
By definition, a rub is a spice blend that contains salt which is literally rubbed on meat, or as in this case, on fish prior to cooking. We learned how to make this Indian rub from our friends in Kerala who use it as an all-purpose seasoning on fish fillets which they grill on a tawa (a flat, cast-iron pan). During cooking, the spices caramelize and form a delicious crust on the fish. This rub is great on salmon or trout, and is wonderful on any white-fleshed fish, grilled or otherwise.
Ingredients: Turmeric, chili, nigella, paprika, cumin, ginger, salt.
