Native to Southeast Asia, the Kaffir lime does not resemble the limes that are normally available to us. When fresh, Kaffir lime leaves are dark green and slightly waxy. Once dried, they lose their shine but retain their intense citrus-lime flavor. Two or three of Arvinda’s lime leaves or the equivalent in powdered form are a wonderful addition to recipes that call for a light touch of freshness and acidity.
