Real licorice is a root with a subtle flavor, very different from the black candies that we grew up with. True licorice is naturally very sweet.
In the West it is used mostly for sweets and desserts, while it is more commonly used to flavor meat dishes in the East. Its flavor has little in common with conventional black licorice candies, which are made with star anise extract or artificial flavors. True licorice is wonderfully sweet with a lingering, delicate flavor that does not overpower other flavors.

Dry licorice is odorless and its flavor is released only when it comes in contact with water.
In Morocco it is often added to snails to enhance their flavor. In China, licorice often flavors strong meats such as pork, duck and game. We have found that a pinch of powdered licorice enhances red wine sauces. Licorice can be found in our Ras el Hanout blend and some of our wild game spice blends.
True licorice is not bitter but sweet- most candy licorice is made with star anise.
