Mace is the membring of nutmeg and grows directly on to the shell of the nutmeg fruit. It is not as common as nutmeg, and as it’s prone to mold, the harvest weighs in at approximately 5 times less than that of nutmeg. When fresh it is a brilliant red which eventually turns to orange, once dry. It has a more subtle fragrance than nutmeg yet deliciously enhances fish, poultry and veal dishes as well as a variety of pasta recipes. Can be used in sweet and savory dishes, or anywhere that a touch of nutmeg would make a difference – but with a lighter touch. A mouth-watering discovery once added to a carrot cake or seafood. Mace can also be used as a modifier, to unite the varied flavours of a dish.
