This thirty year old family spice blend for ham was concocted using various kinds of mustards, a pinch of aromatic spices like cardamom and a generous helping of maple sugar. Traditionally, baked ham is the star of our Easter meal and is also the main attraction of our home-style, annual Sugar Shack festivities. Simply rehydrate the spice blend with good vinegar and some rum, then rub the paste on the meat to fashion a beautifully caramelized baked ham.
This blend can also be used for pork chops or ribs. Also amazing on oven-baked chicken and roasted root vegetables.
Ingredients: maple sugar, yellow mustard, brown mustard, allspice, clove, cardamom.
