Zaatar is a distinctive spice blend that is common to many countries throughout the Middle East. It usually consists of thyme, sesame seeds, sumac, salt and other spices – depending on the recipe. It is a somewhat tart blend that is often used as a finishing touch on humus, vegetable dishes, brochettes and other grilled meats. It is the ideal blend to sprinkle on olive oil-grilled pita bread.
We created this Quebec-centric version using wild sumac from the Gaspé region, with dried herbs grown in Québec such as thyme, savory and a touch of maple sugar. There is also a pinch of Green Alder pepper and a hint of Gorria chilies. Nordic Zaatar, as a result is fragrant, herbal and packs a little more heat than a traditional zaatar.
Use as a finishing touch on your grilled meats, on trout or salmon filets, in vinaigrettes, on fresh tomatoes or in a simple yogurt dip.
