A wild, long pepper from Colombia with a unique flavour that immediately distinguishes it from other long peppers. Pipilongo is traditionally used in the preparation of a variety of recipes such as Sancochos (simmered fish dishes) and ceviches but, also for seasoning crustaceans, wild meats, rice, vegetables and pulses.
Native to the Americas, Pipilongo is harvested from the Piper tuberculatum shrub, which grows in Mexico, Central America, Colombia, Peru and Brazil. It is particularly prized by the Afro-Colombian communities of the Pacific Coast of Colombia.
It is used in the production of Viche, a traditional home-brewed, sugar cane alcoholic beverage, that has recently been legalized in the country.
