Kashmiri saffron is great for rice, fish and meat dishes. It will add a festive touch to any dish. In Kashmir a soothing tea is made by boiling saffron with a cinnamon stick and a few pods of green cardamom. Saffron is reputed for its calming effects.
Crush the saffron threads roughly in a cup and let steep for several minutes in a few tablespoons of hot water or broth before adding to your recipes. The short infusion will draw out the flavor and color of this unique saffron. Most recipes generally call for ¼ gram of saffron.
