Scotch Bonnet is considered to be among one of the hottest chiles and is used abundantly throughout the Caribbean. Trinidad and Barbados are well known for their hot sauces that rely on this chile and in Jamaica it is one of the main ingredients in the preparation of their famous Jerk seasoning. Scotch Bonnet is extremely fruity and can easily be added in small quantities, to curries and other stewed dishes, or even in freshly made salsas.
