Called white curry because it does not contain red chilies or turmeric. It is usually paired with coconut milk giving a “white” color to the sauce. A wonderfully refreshing and herbal curry with lemongrass and pandanus leaves . A great all-purpose curry whose uses reach beyond south Asian cooking.

Pandan (also known as pandanus) is most well-known for its use in Southeast Asian desserts and confections, but its sweet fragrance is equally indispensable for our white curry. We buy fresh leaves that we slice and dry ourselves, just for this spice blend!
