Wild-harvested Greek oregano has a strong aroma, slightly lemony, with a peppery side. Gathered in Messenia, a region in the southwest of the Peloponnese. Our supplier, who also is also an olive oil producer, harvests the oregano by hand and sets the flowers aside: they are considerably more aromatic than the leaves. Best used in Greek, Italian, or Turkish recipes, or in bean and lentil dishes, with chicken, or in stock. Oregano flowers are also great when paired with other herbs, like thyme, in recipes that call for citrus.
