Voatsiperifery is a tailed pepper that grows wild on the island of Madagascar. Each berry is harvested by hand from vines reaching up to 20 meters high. In order to preserve the peppercorn’s delicate red color, the berries are left to ripen on the vine longer than usual. The resulting aroma is incomparable.
Fruity, woody notes with citrus overtones make this pepper a great choice for chocolate, strawberry or pineapple desserts. When blended with other peppers, it’s great on red meat and game. It’s best added later in cooking, since cooking red Voatsiperifery for too long can bring out some bitterness in the spice.
