Yellow birch, also called golden birch or wild cherry in French, is a North American flowering tree whose small, red berries are sometimes used to make jam. Its flowers, when dried, take on the aroma of wildflowers, with notes of almond and cherry. They should be used in small doses, since they have a strong, bitter backbone.
Our Yellow Birch Flowers come from Quebec’s boreal forests; they’re hand harvested with care not far from Girardville, in the northern part of the Lac Saint-Jean region.
