Yunnan spices make a fine blend in to which guests can dip their food with chopsticks. In the West we have a pepper grinder on tables. Around Yunnan, small bowls of ground Yunnan spices accompany every meal. Each region of the Chinese province of Yunnan has its own particular variety of this spice blend.
Our blend comes from the Nu River valley, nearby the Tibetan border, Myanmar and the legendary Golden Triangle, home of China’s finest black cardamom and chilies.
For an authentic preparation, simply add herbs and vegetable broth to Yunnan Spice Blend to make a table sauce. This blend is also a great way to add a southwest Chinese flavor to stir-fries, steamed vegetables, or even as a base for classics like Sichuan mapo tofu or twice-cooked pork.
