Amchur-Sautéed Potatoes

L'amchoor vient aciduler ces pommes de terres autrement bien relevées par une variété d'épices. À réaliser avec ou sans piment, pour plus ou moins de piquant.
ingredients
- 3 Tbsp ghee
- 2 lbs. potatoes, cooked
tarka
- ¼ tsp Ajwain
- ½ Tbsp Cumin
- 1 pinch Asafoetida
- 4 slices fresh ginger, chopped
seasonings
- 1 tsp Amchoor, ground
- 2 Tbsp Cumin, ground
- 1 tsp Black Pepper, ground
Cayenne, to taste
- Salt, to taste
- Juice of ½ Lemon
- Cilantro, chopped

Chop potatoes into cubes. Set aside.

In a pan, heat the ghee over medium heat. Add cumin, ajwain and the asafoetida. Cook 10 seconds.

Add ginger and cook for 10 seconds more.

Add potatoes and sauté for 1 minute.

Add remaining spices from Seasoning except for the lemon juice and the coriander. Cook until the potatoes are very hot.

Drizzle with lemon juice. Garnish with chopped coriander. Serve.
