Apple and spice cake

A well flavoured apple cake that’s not too sweet is a wonderful accompaniment to a cup of afternoon tea or coffee. Can be served with or without icing.
Ingredient
- 2 cups flour
- 1 tsp baking powder
- 1 tsp bicarbonate of soda
- ½ tsp salt
- 1 Tbsp Mulling spices, ground
- 2 eggs
- ½ cup vegetable oil
- ½ cup applesauce
- ½ cup sugar
- 1 tsp vanilla extract (opt.)
- ½ cup honey
- 3 small apples, grated
- ½ cup walnuts, chopped

Preheat oven to 350 °F. Butter a spring mold.

In a bowl, mix flour, baking powder, bicarbonate of soda, salt and spices. Set aside.

In another bowl, beat eggs with oil, applesauce and sugar for about 2 minutes.

Add vanilla extract and honey and incorporate well. Repeat with the apples.

Add all dry ingredients and nuts. Mix delicately to incorporate thoroughly.

Bake in the oven for 50 minutes. Check to see if it’s done by inserting a toothpick in the middle. If ready, it should come out clean.
