Batata Masala – Indian Spice-infused mashed potatoes

This potato preparation is almost exclusively reserved for a Mumbai street food known as Vada Pav – or Bombay burger! It can be served as-is, or as an accompaniment to a curry or dhal. It’s delicious served with an cilantro chutney or tamarind chutney.
Ingredients
- 1 lb potatoes
- 4 Tbsp clarified butter or vegetable oil
- 2 tsp brown mustard seeds
- ½ tsp adjwain
- 20 fresh curry leaves
- 1-3 hot green chilies, to taste, chopped
- 5 garlic cloves, chopped
- 1 Tbsp ginger, chopped
- 1 pinch asafoetida
- Salt, to taste
- ½ tsp turmeric, ground
- 12 fresh coriander stems, chopped
- Juice of ½ lemon
