Taken from our latest book The Spice Trekkers cook at home, this tahini-based dressing is now a must-have for our family dinner and staff lunches. It's a perfect fit for garnished salads, salmon, chicken and salads with cooked greens (beet greens, spinach, kale).
Place lemon juice, garlic, spices, honey and salt in a bowl or jar. Mix well. Let stand 2 minutes.
Incorporate tahini and oils. Add a little water if the dressing is too thick. Toast sesame seeds in a small pan then add to the dressing. Store in a cool place.
