English Cauliflower Curry

English Cauliflower Curry

A typical English side dish, inspired by India.


1 medium cauliflower

3 Tbsp ghee or vegetable oil

2 onions, chopped

3 cloves garlic, chopped

1 slice ginger, chopped

1 Tbsp Madras Curry or Wholesome Curry

Salt to taste

2 firm tomatoes, sliced into eighths

¼ cup plain yogurt

    Divide cauliflower into florets.

    Heat ghee in a pot. Add onions and brown for 5 minutes.

    Add garlic, ginger, cauliflower and ground curry. Sauté a few minutes more.

    Add ½ cup water, then salt and cover. Cook for 10 minutes.

    Add tomatoes and cook for 5 minutes more.

    Beat yogurt vigorously for 1 minute until smooth, then add to pot and stir well.
