Georgian blackberry sauce
Fresh, fruity and slightly acidic, this blackberry sauce is great with roast chicken or pan-fried fish. If you can get your hands on blackberries that are in season (it's a short one), the result will be even better!
- 1 pack blackberries
- 2 garlic cloves
- 1 tsp salt
- ½ tsp Reshampatti pepper flakes or ½ jalapeno
- 1 Tbsp lemon juice
- ½ tsp coriander seeds, ground
- Pepper to taste
- ¼ cup dill, chopped
- 1 Tbsp mint, chopped
Place all ingredients, except the herbs, in a blender and purée.
Push through a fine sieve or strainer to make a coulis. Incorporate the herbs.
