Jeera Aloo - Roasted potatoes with cumin

These roasted potatoes are the perfect side to any chicken or fish curry. We also like to serve them with kebabs and other grilled meats.
Ingredients
- 5 Tbsp ghee
- 2 tsp cumin, whole
- 1 ½ Tbsp fresh ginger, chopped
- 1 pinch Asafoetida
- Dried hot pepper, to taste
- 2 lbs. potatoes, cooked and cut into 1'' cubes
- 1 tsp cumin, ground
- Salt and black pepper, to taste
- Cilantro

Heat a frying pan over medium-high heat.

Melt ghee and grill whole cumin for a few seconds.

Add ginger, asafoetida and the dried hot pepper. Cook for a few seconds more.

Add ground cumin, potatoes, salt, and pepper. Cook for 10 minutes, stirring often.

Garnish with fresh coriander and serve hot.
