Kulfi

Kulfi is a popular Indian cold dessert. It’s usually flavoured with nuts and cardamom, or even with mango or rose water.

Place the milk and cardamom in a pot and bring to a boil. Reduce heat and simmer, stirring often, until milk is reduced by 1/3, about an hour.

Add sugar and saffron. Cook 2-3 more minutes.

Remove from heat and add nuts and condensed milk.

Transfer to a metal bowl and cover with parchment paper. Place in the freezer for 1 hour.

Remove from freezer and break apart the partially frozen pieces with a wooden spoon. Stir and return to freezer for another hour. Repeat twice.

Pour contents of bowl into a popsicle mould and freeze at least 12 hours.
