Matar Paneer

This well known northern Indian delight of green peas and paneer cheese is served in a tomato sauce. If you make your own paneer you can use the leftover whey in this recipe. If not, you can replace it with water and lemon juice.
Ingredients
- 1 lb paneer, cubed
- ¼ cup ghee (clarified butter)
- 2 Tbsp ginger, chopped
- 4 Tbsp garlic, chopped
- ½ cup onion, finely chopped
- 2 tsp turmeric powder
- 3 black cardamom (seeds only), ground
- 2 whole cloves
- 4 dried chilis
- 1 Tbsp paprika
- 1 cup whey or 1 cup water + 1 Tbsp lemon juice
- 2½ cups peeled tomatoes
- 1 lb French peas
- Salt
- Cilantro
- Garam masala, ground

Heat ghee and sauté paneer until golden.

Remove paneer and set aside.

Heat garlic and ginger in ghee until coloured.

Add onions and sauté until golden.

Add ground spices and cook one minute.

Add cream and tomatoes.

Bring to a boil and cook for ten minutes. Taste for salt.

Add peas and paneer.

Just before serving, garnish with fresh coriander and garam masala.
