Maxime & Laurence’s Brownies

Maxime Laurenceâ8099S Brownies

So you think you’ve already got the world’s best brownie recipe? Okay, we won’t doubt you. But do yourself the favor of at least trying these brownies, which are rich enough to delight royalty yet simple enough for the culinary debutant.

The recipe is courtesy of our Spice Trekker colleagues Maxime and Laurence.


  • 9 oz. dark chocolate
  • 5.5 oz. powdered sugar
  • 1 ½ stick butter
  • 1 Tbsp sugar
  • vanilla bean
  • 3 eggs
  • ¼ cup flour
  • Pinch of salt
  • 1/3 tsp habanero, chopped very finely
  • 3 Tbsp cocoa beans, roughly chopped

    Preheat the oven to 350°F.

    In a double boiler, melt the butter and the chocolate. Add the chopped pepper.

    In a bowl, mix the sugars, the salt and the cocoa beans. In a different bowl, beat the eggs with the vanilla. Pour the eggs into the dry ingredients and beat until there remains no dry sugar powder.

    Pour the melted chocolate into the mix.

    Sift the flour and blend well into the mix.

    In a 9x9-inch pan covered in parchment paper, pour in the blend.

    Cover in aluminum foil and cook for 8 minutes. Remove the aluminum foil and cook for another 10 minutes or so.
