You can garnish these mushrooms with some arugula or feta cheese, or just serve them as vegetarian burger patties. Choose fresh, firm portobellos.
- 6 Portobello mushrooms
- 4 Tbsp olive oil or coconut oil
- 3 Tbsp classic rub
- Olive oil for garnish
Heat grill. Remove stems from mushrooms and reserve for another use.
Rub inside mushrooms with oil then the rub.
Place mushrooms, seasoned side down, on the hot grill. Grill 3-4 minutes.
Flip mushrooms, turn down flame (or set on a cooler part of the grill) and cover BBQ. Cook another 12 minutes.
Remove and serve when mushrooms are cooked and juicy. Splash on some olive oil and serve with lemon.
