This avocado salsa can be a dip or side for all kinds of grilling. It’s also good with cooked vegetables.
- 1 cup tomatillos
- 4 scallions
- 2 jalapeños or serranos
- Salt to taste
- 1 avocado
- 4 Tbsp cilantro, chopped
Dice tomatoes, scallions, and chilies fine.
Place in a mortar or food processor with salt. Reduce to a liquid purée. Add water if needed.
Peel and dice avocado. Incorporate into salsa delicately with cilantro and serve.
