A great way to take advantage of fresh, fragrant Quebec strawberries! Serve with a green salad, an arugula and almond salad or spinach.
- ½ cup de-stemmed strawberries
- ¼ tsp Voatsiperifery pepper, ground
- 2 Tbsp balsamic vinegar
- ½ cup olive oil
- ¼ tsp fine salt
Place all ingredients, except olive oil, in a wide-mouth glass jar.
Reduce to a purée, using a stick blender.
Continue blending while drizzling olive oil, to emulsify the vinaigrette.
