Sweet potato & coconut milk gratin
This delicious melt-in-your-mouth, sweet potato dish is easy to prepare, with its caramel notes and just the right amount of spices and piquant. Cooking time may vary depending on the type of dish used as well as the amount of water in the sweet potatoes.
- 2 large sweet potatoes
- 2 cups coconut milk
- 1 cup water
- 1 Tbsp Caribbean Layover spice blend, ground
- 1 Tbsp salt
Heat oven to 375 °F.
Wash and peel sweet potatoes if necessary. Cut in sections and place in a gratin dish.
Mix coconut milk, water, spices and salt in a bowl. Pour over potatoes.
Cook in oven until potatoes are tender and the coconut milk is reduced and slightly caramelized, about 1h15.
