A simple recipe for two and one of our personal favorites. Enjoy the full flavors of roasted Cornish hen by preparing it in the oven or on the barbeque.
Preheat the oven to 450ºF or fire up the BBQ.
Split the back of the chicken between the two breasts. Flatten with the side of a knife or with the palm of your hand.
In a small bowl, create a paste by mixing the remaining ingredients except for the chutney. Rub the chicken with the paste.
Transfer the chicken on a small bake sheet and place in the oven until almost cooked (approx. 25-30 minutes).
Brush the chutney on the chicken. If in the oven, cook for another 10 minutes; if on the barbeque, cook for another 5 minutes.
