Turkish Rice with Broad Beans

This vegetarian dish is anything but boring. Try it as a meal in itself.
Ingredients
- 2 cups rice
- 6 Tbsp butter
- 1 bunch green onions
- ½ tsp allspice, ground
- 3 Tbsp coriander
- ½ tsp black pepper, ground
- 3 cups broad beans or lima beans
- 1 cup dill, chopped
- ½ cup parsley, chopped

- 1½ cups plain thick yoghurt
- 1 clove garlic, puréed
- Pinch allspice
- Salt
- ½ cup dill, chopped

Wash rice well and drain.

In a saucepan over medium heat, melt the butter. Add green onions and spices.

Heat until aromas begin to release, 5-8 minutes.

Add rice and mix thoroughly.

Add remaining ingredients along with 3½ cups water.

Cover with parchment paper.

Bring to the boil, cover, reduce heat, and cook 18 minutes.

Remove from heat and let sit 10 minutes
