Turkish Turkey

This easy recipe is a fun departure from the ordinary that still fulfils holiday traditions. For best results, baste often and save a small amount of the spice rub to sprinkle on at the end of cooking. Serve with traditional turkey sides like potatoes and gravy or turkish sides like garlic yogurt.
Ingredients
- 1 small, 7-8 pound turkey
- 3 Tbsp Aleppo Kebab spices, ground
- 1 Tbsp Turkish oregano
- 1½ Tbsp salt
- ½ stick (4 Tbsp) butter, softened

Mix salt, oregano, and spices together.

Untruss turkey, remove giblets, and rinse well. Pat dry with a paper towel and rub spices all over turkey, thoroughly, inside and out. Leave to brine, uncovered, in fridge for 24-48 hours.

Preheat oven to 325°F. Remove turkey from the fridge and carefully rub with the butter. Ensure the skin is well covered. Stuff if desired (see our recipe).

Place in oven and roast until the internal temperature reads 180°F (about 2½-3 hours). Be sure to check on it periodically and baste when necessary.
