Vanilla «eau-de-vie» Mirabelle plums

These little plums which steeped in alcohol and are always a great hit at our annual “Staff Party”. Serve alone as an after dinner treat or on vanilla ice cream.The quantities given are approximate. Adjust according to taste, to the size of your pots or the amount of alcohol desired.
Syrup
- ½ litre water
- 1 kg sugar
Pour into a pot and boil until the sugar is completely dissolved (very important!). Set aside.
The jar
- 3-4 kg Mirabelle plums
- ¼ cups salt
- 1 litre alcohol 40%
- 8 vanilla beans

Wash, de-stem and sort the Mirabelle plums. Set aside.

Boil a large pot of water with the salt.

Put the Mirabelle plums in the boiling water. When they float, remove them using a slotted spoon.

Place the Mirabelle plums in clean, glass jars (very important). Add a vanilla bean and cover halfway with alcohol and the rest of the way with syrup.

Close the jars and wait patiently for one month.
