Vegetable Pilaf

A traditional rice and vegetable side dish. Quick and easy. A pilaf is a dish in which rice is cooked in a seasoned broth.
Ingredients
- 2 cups basmati rice
- 1½ cups vegetable of your choice, finely diced
- 3 Tbsp vegetable oil or ghee
- 1 tsp brown mustard seed
- 1 tsp garam masala
- 1 bay leaf
- 1 tsp ground turmeric
- 1 tsp grated ginger
- 2½ cups water or vegetable stock

Under running water, wash the rice until the water runs clear.

In a bowl, place the rice and cover with warm water.

Let sit 20 to 30 minutes. Drain.

Prepare vegetables.

In a heavy saucepan, heat oil or ghee and add mustard seeds. Once the seeds have begun to sizzle after a few seconds, add the vegetables and the remaining spices.

Cook for three minutes. Add drained rice and mix well.

Add liquid and bring to the boil. Cover and cook over low heat for 20 minutes.

Remove from heat and let sit for 20 minutes.
